Ingredients

  • 2 cups fresh spinach finely chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup almond flour
  • 1 large egg
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/8 tsp salt
  • 1 tbsp olive oil plus extra for brushing

Instructions

Prep your ingredients

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Thaw and squeeze dry frozen spinach if using. Mince garlic, crumble feta, and grate Parmesan.

Mix the batter

  • Combine spinach, feta, Parmesan, and almond flour in a large bowl. Add egg, garlic, oregano, salt, pepper, and olive oil. Mix until fully combined.

Shape the crisps

  • Scoop tablespoon portions onto the baking sheet, spaced 2 inches apart. Flatten each to about 1/4 inch thick.

Bake

  • Brush tops lightly with olive oil. Bake 15-18 minutes, rotating halfway, until golden brown and crispy on the edges.

Cool and serve

  • Cool on the baking sheet for 5 minutes, then transfer to a platter and serve warm with your favorite dip.
