Equipment

  • Large cast-iron skillet or griddle
  • Sharp knife
  • Cutting board
  • Spatulas
  • Lid or aluminum foil

Ingredients

  • 1½ lbs ribeye steak very thinly sliced
  • 2 tbsp vegetable oil divided
  • 1 large yellow onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 2 cloves garlic minced
  • 8 slices provolone cheese (or American cheese or 1 cup Cheez Whiz)
  • 4 hoagie rolls (6-8 inches each)
  • 2 tbsp butter softened
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt

Instructions

Prepare the beef

  • Place beef in freezer for 30-45 minutes until firm but not frozen. Slice very thin (about 1/8-inch thick) against the grain. Season lightly with salt and pepper.

Caramelize onions and peppers

  • Heat 1 tablespoon vegetable oil in a large cast-iron skillet over medium-high heat. Add sliced onions and bell peppers. Cook for 5-6 minutes until soft and caramelized, stirring occasionally. Add minced garlic during the last minute. Transfer to a bowl and set aside.

Cook the beef

  • Return skillet to high heat and add remaining tablespoon of oil. Add sliced beef in a single layer (work in batches if needed). Let sear for 1 minute undisturbed, then use spatulas to chop and toss the meat. Sprinkle with seasoning blend (garlic powder, onion powder, paprika, pepper, salt). Cook for 2-3 minutes total until browned and cooked through.

Add cheese and melt

  • Return onions and peppers to the skillet, mixing with the beef. Divide mixture into 4 portions. Place 2 slices of cheese over each portion. Cover with a lid or aluminum foil for 30-60 seconds until cheese is completely melted.

Toast rolls and assemble

  • Butter the hoagie rolls and toast cut-side down on the griddle until golden brown, about 1-2 minutes. Using a spatula, scoop each portion of cheesy beef and vegetables into a toasted roll. Serve immediately while hot.
